On weekend I wanted to try something new and tasty for breakfast. So when I had a chance, I ran to the kitchen and started to prepare this recipe. The evalutation would be good, very tasty with strawberry syrup. It was also tasty when I ate them alone :) The only minus – while I was frying the bread, my kitchen and pan were with a lot of crumbs. Maybe if I wasn’t so in hurry (my little one was very hungry), everything would be in order.

 

(Serves 4 to 8)

2 eggs

2/3 cup milk

4 teaspoons sugar

1/4-1/2 teaspoon ground cinnamon

1 cup flaked coconut

2/3 cup crushed cornfl akes

6 tablespoons margarine or butter

2 tablespoons vegetable oil

8 bread slices

 

Whisk the eggs in a medium bowl until well beaten. Add the milk, sugar, cinnamon and mix well. Combine the coconut and cornflakes in a shallow pan. Heat the margarine and oil in a large skillet over medium heat until bubbly. Dip bread slices into the egg mixture, then coat with the coconut mixture. Place the bread slices in the pan and cook until golden brown, 2 to 3 minutes on each side. Serve with syrup.
