Turkey meatballs with cabbage

Kids-friendly recipe but also very good for adults. I made it for several times and every time all family loved it.

 

(4 servings)

300 g minced turkey or chicken

1 small onion

300 g chopped or minced white cabbage

1 egg

2 tablespoons rolled oats

salt

pepper

oil for frying

 

Boil water and pour over cabbage. Let sit for some time, then pour to the sieve and drain. Chop the onion. Mix all ingredients. Form small meatballs and fry over small heat.

Zucchini muffins with cheese

We like to eat these muffins for afternoon snack when we don’t want anything sweet. I make mini muffins so they are perfect for little children hands. They disappear very quickly.

 

300 g zucchini

120 g grated cheese

1/2 middle-sized onion

2 tbsp cornstarch

1/2 tsp black pepper

1 tsp sugar (optional)

50 ml dill and parsley, chopped

3 middle or 2 large eggs

 

Grate zucchini and squeeze out the liquid. Using a bit of butter stir-fry the onion, then add grated zucchini and stir-fry for 3-5 minutes more, add pepper, sugar and leave to cool. Whisk the eggs together with cornstarch, add chopped herbs, grated cheese and zucchini. Mix well until combined and spoon into the greased muffin tins. Bake at 180°C for 15-18 minutes. Serve muffins with sour cream, as a separate meal or as a garnish.

Buns “Maize” with yeast

Maybe when you take a look at the recipe you think that it’s ordinary yeasted buns. And you’ll be wright :) We just liked that they’re not too sweet, and the shape of buns look pretty. These buns are popular in our family. I also tried to make rabbit shape buns for children but understood that here I need to practise a lot :)

 

(15 buns)

500 g flour

250 g milk or water

20 g fresh yeast

2 eggs (1 for the dough, 1 for brushing)

50 g sugar

50 g margarine

5 g salt

lemon or orange peel or vanilla

 

First of all sift the flour and set aside. Then warm up the fluid, break the egg, put salt, sugar and mix till sugar dissolves. Pour the fresh yeast mixed with some sugar. Then mix in the flour. At the end of kneading pour warm fats and seasonings. Stop kneading when the sides of the bowl are clean. Smooth out the surface of dough, coat with some fats or pour over some flour, cover with clean towel and let rise.
When the dough has risen, devide it to 15 even balls. Every ball roll out to 60cm long roll and devide in half. Cross the rolls and braid. Put buns on the baking tray lined with baking paper and let rise. Then coat with an egg and bake in 230-250°C for about 10-15 minutes.

 

Note: I prepared and rose the dough in a bread machine.
