Banana muffins


These healthy muffins are extremely moist and delicious.

 

(12 muffins and 24 mini muffins)

300 ml flour

150 ml wheat or oat bran

2 teaspoons baking powder

150 ml sugar

100 g walnuts

100 g butter

1 egg

2 ripe bananas

50 ml dark syrup (I used honey)

150 ml sour milk or yoghurt

 

In a big bowl mix flour, bran, baking powder sugar and chopped walnuts. Melt the butter and mix with an egg, mashed bananas syrup and sour milk. Pour this mixture into the bowl with dry ingredients and mix carefully. Devide the batter between buttered muffin moulds. Bake at 190°C preheated oven about 20-25 minutes. Let rest baked muffins in the moulds about 10 minutes and only then take them out and let cool completely.

Chilli hotch-potch with rice


My hubby likes hot dishes, so one day I decided to indulge him. After eating this dish he was very happy and with the smile in his face :) He even wasn’t disturbed that in this hotch-potch was corn, that he really doesn’t like. Tomatoes brought the right freshness. I think that this dish is really very good balanced.

 

(3 servings)

1/2 green chilli peppers, jelapeno (I used 2 small marinated chilli peppers)

1 onion

1 clove garlic

1/2 tablespoon oil

200 g mince meat

Taco seasonings or other spices to taste

150 ml rice

300 ml water

2 tomatoes

50 ml corns, frozen or from can

 

Wash, deseed and chop chilli. Peel and chop onion and garlic clove. Saute chilli, onion and garlic in stainless steel pot with oil. Put in mince meat and fry till it crumbles. Season with spices, put rice and pour water. Cover with a lid and boil about 15-20 minutes. Wash and cut in cubes tomatoes. Mix tomatoes and corn into the hotch-potch. Serve with crunchy salads and tablespoon of natural yoghurt or sour cream.

Layered curd and bread dessert


One more delicious thing from ordinary products. It’s not very sweet but that’s what we need after holidays :) Also it’s very good for using up stale bread. To tell the truth neither I or my husband expected that it will be so delicious. Kids liked it too. When we tasted this dessert at the same day, the bread crumbs were very crunchy, the next day – they became soft, but both days it was real pleasure to eat it.

 

(6 servings)

1st layer:

250 g sour apple sauce (I used baked apples)

2nd layer:

150 g stale dark bread

25 g butter

2 tablespoons sugar

3/4 teaspoon cinnamon

3rd layer:

250 g curd

100 g sour cream or yoghurt (I used a lot more because my curd was very dry)

1 tablespoon sugar

 

Grate bread. In a pan melt butter and toast bread crumbs. Mix in sugar and cinnamon, cool down. With the blender mix curd, sour cream and sugar. In the glasses put in layers apple sauce, bread crumbs and curd cream. Before serving keep in fridge for 2-3 hours.
