Tender apple cake

I still have apples and they are shouting that I have to make something from them before I have to throw them away. I chose this recipe because I had some vanilla sauce and in the recipe it was suggested to eat it with ice creams. Children like the cake even without the sauce.

500-600 g apples

2 tsps. cinnamon

200 g and 1 tbsp. sugar

150 g butter, room temperature

1 lemon grated skin

2 eggs

200 ml milk

300 g wheat flour

2 tsps. baking powder

Heat the oven to 180°C. Peel and core apples, slice thinly. Mix with 1 tablespoon of sugar and cinnamon. 26-28 cm diameter baking form coat with butter and bread crumbs or line with baking sheet. Mix butter and remaining sugar. Add eggs one by one. Mix flour with baking powders, sift and add to the butter mixture. Pour milk and add lemon peel. Mix everything. Two thirds of the dough pour to the form. Then put apples and then pour the remaining dough. Bake about 45-55 minutes. Serve warm or cool with ice cream or the sauce of your choice.

Salads Herring bites

Simple but satisfying salads. I liked them a lot. My hubby said that he needs more moisture, but everything can be fixed by adding sour cream or mayonnaise to your taste.

(6 servings)

200 g not too salty herrings

6 boiled small potatoes

1 red onion

1 onion

fresh chopped dills

200 g sour cream

100 g mayonnaise

2-3 boiled eggs

Mix sour cream, mayonnaise, chopped onions and dills. Cut herring and potatoes into small chunks and mix with the dressing. Chop boiled eggs and mix in the salads.

Dessert with halva for lazy people

I can’t decide – I became lazy or just too tired to do anything. So still living and looking for quick and easy food. This lazy cake is not very sweet, so peope with sweet tooth maybe should add some sugar. But we liked it a lot – it’s not too sweet (as I mentioned :) ), moist and creamy consistency.

2 packs (180 g each) square biscuits

100 g halva (I used peanut halva)

500 g sour cream

Break biscuits in small chunks. Grate halva and mix with sour cream and biscuits. Mix well. Line form or bowl with plastic food foil and pour the mixture. Cover with plastic food foil and press, that no air bubbles left. Put in a fridge and wait at least 4 hours.
