Sandwiches with tomatoes and olives


One more our breakfast recipe. Taste reminds pizza’s, when I added basil leaves. These sandwiches you will prepare very quickly but the taste will give you a good start for the whole day.

 

(2 servings)

4 slices or rye bread

75 g tomatoes

50 g black olives

50 g parmesan cheese (I used simple cheese)

black peppers

some basil leaves

 

Cut tomatoes in small cubes, olives – in rings. Chop basil leaves. Mix in a bowl tomatoes, olives, basil and season with black peppers. Put mixture on bread and sprinkle with grated cheese. Put sandwiches in the microwave for 1 minute or under the grill in an oven till the cheese melts.


1 serving – 119 kcal.

Sandwiches with curd and greens


This our new breakfast. It’s quick, easy, fresh and tasty. Now the weather is too cold for smoothies, baked eggs are boring and my family doesn’t eat much sandwiches. But these are different because greens brings freshness. So if you are bored from sandwiches with ham or cheese, you should try these.

 

(2 servings)

4 slices of rye bread

3 tbsps. (100 g) light curd

5 g dills

5 g parsley

2 big salad leaves

1 tbsp. sour cream (optional)

salt

 

Chop greens and mix in curd. If mixture is too dry add sour cream. Season with salt. Put curd with greens on slices of bread and serve.


1 serving – 124,5 kcal.

Minced meat and feta bake


I think this is the last recipe with pasta for some time. Now I’ll take a break from pasta because now we eat a lot of salads, barbequed meat and everything we find in the freezer. Of course when autumn will be near, we gonna need warming and satisfying food, so pasta will be back. Some words about the recipe. It’s satisfying and good, and simple. Unfortunately I had only one third of cheese, but it didn’t ruined the taste.

 

(6 servings)

300 g pasta

400 g minced meat

1 onion

2 cloves of garlic

1 can (400 g) of chopped tomatoes

100 ml water

100 g feta cheese

150 g grated cheese

2 tsps. red bell pepper powder

salt

peppers

 

Boil the pasta. Fry minced meat with a chopped garlic and onion. Add water, chopped tomatoes and feta cheese. Season with paprika, salt and peppers. Put meat and pasta to a baking dish, mix well. Sprinkle with cheese and bake at 180°C preheated oven for about 20 minutes.
