Chilled dough cookies with walnuts


I have no time to do nothing :) Works is taking all my time. Good news that it will not last forever. So I have no time to bake cookies or pies, but it doesn’t stop me from wanting some sweets. And these cookies are perfect – you can form a log and then put in a freezer for later bake, when you will have no spare time.

250 g wheat flour

1 tsp. baking powder

125 g butter

125 g sugar (next time I will use 100g)

60 g walnuts, finely chopped

1 egg

1 tsp. vanilla essence

 

Sift the flour and baking powders. Put butter and crumble with the fingers till small crumbs. Mix in sugar and walnuts. Pour in the egg and vanilla essence. Mix the dough. Form about 5cm diameter log and fold in the foil or baking paper. Roll a little bit that sides were even. Put in a fridge for about 8 ours. Line baking tray with the baking paper. Cut dough log in thin slices and put them on a baking tray. Bake in 190°C preheated oven for about 10-12 minutes, or till become golden brown.

Chicken, marinated in a sweet chilli sauce


We love chicken, but it’s very hard to find good chicken marinade to bake it on the grill. And know I know that it’s not the fault of the recipes, it’s because we a lot of time overbake it. The last time we baked chicken on the grill I was walking around the grill and watched that no one overbaked it :) I looked strange, but… what can we do if we want to taste food good :)

1 kg chicken fillet

1/3 glass sweet chilli sauce

2 tbsps. fish sauce

2 tsps. ginger, freshly grated

2 cloves garlic, minced

salt

1 tbsp. parsley, chopped

 

In a bowl mix all marinade ingredients. Put chicken and marinade for a few hours, or better overnight. Bake on a grill, but in the oven also possible. Bake very shortly on both sides. It’s really easy to overbake chicken and it will be very dry, so be carefull. Before serving sprinkle with chopped parsleys.

Minced meat cakes with potatoes


This dish is very practical :) It’s suitable for festive gatherings, because it doesn’t require a lot of time for preparing and everythings are baked at one time. All you need is only salads. We all agreed that we will prepare it again and again.

(6 cakes)

400-500 g minced meat

1 egg

1 onion

2 tsps. mayonnaise

1 tbsp. starch

salt

peppers

4-5 potatoes

pinch of caraway

2 cloves garlic

oil

6 slices cheese

 

Chop onion. Mix minced meat with onion, egg, starch. Season with salt and peppers. Devide meat to 6 parts and form thin cakes. Put them on a baking tray. Coat with mayonnaise (actually I forgot to do this).
Peel potatoes and cut in small cubes. Put in the bowl, sprinkle with a few tablespoons of oil, season with caraway seeds, garlic, salt and peppers. Mix everything. Put potatoes on meat and press a little bit. Bake in preheated to 220°C oven about 20 minutes. Then put cheese slices on top and put to the oven till cheese melts.
