Banana zucchini muffins


Banana makes these muffins smell very nice and zuchhini gives moisture. The good thing that you can use freezed grated zucchini (just squeeze the juice very good).

1/3 cup shortening

1/2 cup sugar (I used 100 ml)

2 eggs

1 3/4 cup all-purpose flour

1 1/2 tsp. baking powder

pinch of salt

2 ripe bananas, mashed

1 cup grated zucchini

1/2 cup chopped walnuts (optional)

 

Preheat oven to 180°C. Cream together shortening and sugar. Add eggs and banana, beat well. Sift together dry ingredients, add to creamed mixture. Add zucchini and stir well. Stir in nuts. Pour into muffin pan. Bake for 30-35 minutes. Let cool on wire rack.

Buns with cottage cheese


I bake these buns everytime I have some cottage cheese left and want something sweet but at the same time simple. And the next day I just love to warm them a few seconds in the microwave – then they smell like newly baked. Really good!

300 g flour

2 tsps. baking powder (I add only 1 tsp.)

100 g sugar

1 tsp. vanilla

150 g cottage cheese

1 egg

100 ml milk

50 ml oil

 

Mix flour with the baking powders. Seperate egg white and mix with sugar. Pour milk, oil, vanilla and mix in cottage cheese. Sift in flour and mix the dough. Devide it to 12 parts. And then every part – to 3 parts. From every piece roll about 15 cm log and braid from three pieces. Put buns on a baking tray lined with baking paper. Mix egg yolk with a teaspoon of milk and coat buns with this mixture. Sprinkle with sugar. Bake in the preheated to 200°C oven about 20 minutes.

Granola with honey


Granola that smells with honey, but very crunchy and addictive like sunflowers. Everytime I prepare it, half of it I eat alone – without milk, just like crunchy cookies. Even my hubby loved it, just honey is not recommended for him, so next time I will prepare it with golden syrup instead of honey. And I like this granola without any mix-ins!

3 cups old fashioned rolled oats

2 Tbsp. brown sugar

1 tsp. ground cinnamon

1/4 tsp. salt

1/3 cup honey

1/3 cup oil

 

Preheat oven to 150°C. In large bowl combine oats, brown sugar, cinnamon and salt. In another bowl, combine honey and oil. Pour mixture over oat mixture. Stir until well-combine. Use hands, if necessary. Pour mixture into a baking tray lined with baking paper. Spread into a thin, even layer. Bake 40 minutes or until golden brown, stirring once halfway through. Remove from oven and cool completely. Stir the mixture once or twice while it cools (it will harden as it cools). Once cooled, you can add in desired mix-ins. Store in an airtight container.
