Russian pancake baked in an oven

The first pancake that baked out grate. Others that I’ve tries were some how not good – too much milk, or too much berries. But this time pancake was fluffy, and tender. Only next time I’ll try to bake it in a larger form, because this time it came out very thick and that’s why taste was like curd bake but without curd :) But it’s tasty, easy and quick. And you don’t have to stand near the pan.

 

(4-6 servings)

4 eggs

250 ml flour

1 tbsp. sugar

60 ml milk

1 tbsp. oil

 

Separate egg whites and yols. Beat yolks with sugar till white fluffy mixture. Add sifted flour and pour milk. Beat egg whites till stiff peaks and carefully mix them to the mixture. Grease baking form with oil. Pour mixture to the form. Put it to the preheated to 180-200°C oven and bake 30 minutes.

Fluffy cottage cheese pancakes


Very delicious pancakes. Fluffy, very light. Just melts in your mouth. When I remember their taste I’m suffused with warmth and good memories of the weekend.

 

4 eggs

200 g cottage cheese

200 g sour cream

180 ml flour

3/4 tsp. baking powder

1/4 tsp. salt

3-4 tbsps. sugar

oil for frying

 

Separate egg yolks from egg whites. Beat egg yolks with strained cottage cheese and sour cream. Mix flour with baking powders, salt, sugar and sieve. Put flour mixture to the cottge cheese mixture. Add well beated egg whites and mix carefully. Bake in a hot pan with a little bit of oil. Serve with desired preserve.

Polenta pancakes


Somehow I baked pancakes long time ago. So came the time when I started to miss them. And I guess my all falimy miss them too, because these polenta pancakes disappeared very quickly. If you don’t have polenta or lazy to grind corn groats, you can use corn flour. You just have to use more milk.

 

(4 servings)

2 eggs

250 ml milk

100 ml polenta

200 ml wheat flour

1 tsp. baking powder

1/2 tsp. salt

oil for frying

 

Beat egg and milk. Put polenta, flour, salt and baking powders. Mix very well, the mixture have to be solid. Bake on the middle heat about 2 minutes per side.
