Chilli hotch-potch with rice


My hubby likes hot dishes, so one day I decided to indulge him. After eating this dish he was very happy and with the smile in his face :) He even wasn’t disturbed that in this hotch-potch was corn, that he really doesn’t like. Tomatoes brought the right freshness. I think that this dish is really very good balanced.

 

(3 servings)

1/2 green chilli peppers, jelapeno (I used 2 small marinated chilli peppers)

1 onion

1 clove garlic

1/2 tablespoon oil

200 g mince meat

Taco seasonings or other spices to taste

150 ml rice

300 ml water

2 tomatoes

50 ml corns, frozen or from can

 

Wash, deseed and chop chilli. Peel and chop onion and garlic clove. Saute chilli, onion and garlic in stainless steel pot with oil. Put in mince meat and fry till it crumbles. Season with spices, put rice and pour water. Cover with a lid and boil about 15-20 minutes. Wash and cut in cubes tomatoes. Mix tomatoes and corn into the hotch-potch. Serve with crunchy salads and tablespoon of natural yoghurt or sour cream.

Zucchini meatloaf

Very moist meatloaf. The taste is very mild so very delicious with hot tomato sauce.

 

(6 servings)

2 eggs

1/2 cup milk

1/2 cup oatmeal

1 cup shredded zucchini

1/3 cup finely diced onion

2 tablespoons chopped fresh parsley

1 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/8 teaspoon dry mustard powder

700 g ground meat

1/2 cup hot tomato sauce

1 tablespoon grated Parmesan

 

Preheat oven to 175°C. Coat a large loaf pan with the vegetable cooking spray and set aside.
In a large bowl beat the eggs with a fork. Mix in milk, oatmeal and allow to rest for a few minutes. To the egg mixture stir in zucchini, onion, parsley, salt, pepper, basil, oregano and mustard powder. Add ground meat and gently combine. Place in prepared pan and press down slightly.
In a small bowl combine the marinara sauce and Parmesan cheese. Spread on top of meat. Bake for 1-1 1/4 hours. Allow meatloaf to rest for about 5 minutes before slicing.

Sausage stew

Very simple but still effective stew. Especially good when you have to feed your family with only five sausages.

 

(3 servings)

5 sausages

1 big red paprika

2 clove garlic

3 tablespoons ketchup

4 small tomatoes

oil for frying

 

Cut sausages in two pieces and then lengthwise. Heat some oil in the pan, put sausages. Then clean paprika and cut it into strips. Put to the pan with sausages. Prepare garlic cloves and crush them. Cut tomatoes into cubes. When paprika softens put garlic, tomatoes and ketchup in the pan and mix. Stew for 5-10 minutes more, while tomatoes become soft. If you like you can add herbs.
