Pumpkin Chocolate Chip Muffins

Author: Aušra

Date:

These muffins are really good, because they are very moist, not very sweet and of course – they are with chocolate! My kids just love them and at one time ate almost everything (my hubby helped them a little bit 🙂 ). So we agreed that we will repeat very soon.

Pumpkin Chocolate Chip Muffins

Time needed:
Yields: 12 mini muffins
Calories: 104 kcal / mini muffin

Ingredients:
1 cup = 237 ml

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup ground flaxseed or wheat germ
  • 2 tsps. baking powder
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup packed brown sugar
  • 1/2 cup low-fat milk
  • 1/3 cup canola oil

  • 1 tsp. vanilla sugar

  • 1/2 cup chocolate chunks (I used only 50g)

Directions:

  • Preheat the oven to 180°C. Lightly coat 24 mini muffin cups with butter and set aside.
  • Whisk together the flours, ground flaxseed, baking powder, cinnamon and salt in a large bowl
  • Combine the pumpkin, eggs, brown sugar, oil, milk and vanilla in a medium bowl and stir until well combined.
  • Pour the liquid ingredients over the dry ingredients and stir until just moistened.
  • Stir in the chocolate chips.
  • Spoon the batter into the prepared muffin cups.
  • Bake 15 to 18 minutes until a toothpick inserted in the center comes out clean. When making 12 full-size muffins, bake for 20 to 23 minutes.
  • Transfer the pan on a wire rack and cool 5 minutes. Remove the muffins and cool an additional 5 minutes before serving.
  • Enjoy!

Minkštas obuolių pyragas

Tender apple cake

I still have apples and they are shouting that I have to make something from them before I have to throw them away. I chose this recipe because I had some vanilla sauce and in the recipe it was suggested to eat it with ice creams. Children like the cake even without the sauce.

Atšaldytos tešlos sausainiai su graikiniais riešutais

Chilled dough cookies with walnuts

I have no time to do nothing 🙂 My job is taking all my time. Good news that it will not last forever. So I have no time to bake cookies or pies, but it doesn’t stop me from wanting some sweets. And these cookies are perfect – you can form a log and then put in a freezer for later bake, when you will have no spare time.

Reindžerio sausainiai

Ranger cookies

A few days ago I thought that I baked cookies very long time ago. And my mother mentioned that she liked the cookies that baked with chocolate. And I wanted oat cookies. So when I saw this recipe I decided to make them 🙂 Because my hubby don’t want to eat sweets, almost all cookies went to my work. And I have to say that I had no cookies to take home 🙂

Marmurinis moliūgų pyragas su kremine varške

Swirled pumpkin cream cheese cake

It looks like simple ordinary pumpkin cake, but special taste gives cream cheese. It takes cake to another level 🙂

Kama miltų sausainiai su šokoladu

Kama flour cookies with chocolate

This time I used whole spelt flour, just because whole wheat four I couldn’t get in our store. And measured everything in grams because it’s more convenient for me. I was surprised that I had to use more flour that it was noted in original recipe. Maybe it’s because of spelt flour. So I suggest to add spelt or wheat flour gradually and to see if more is needed.
