Pumpkin granola with chocolate chunks

Author: Aušra

Date:

Usually I make granola in summer, when it’s hot outside and no one wants to eat porridge. But when last week I tried new recipe for granola bars and I had only crumbs, my kids ate it just like usual granola for breakfast. And then they asked to make more granola. So I make my favourite at this moment granola. Kids’ favourite granola will have to wait a little bit. They enjoy this granola too, just for them I had to add chocolate with more sugar.

Pumpkin granola with chocolate chunks

Time needed:
Yields: 10 servings
Calories: 239 kcal / serving

Ingredients:
1 cup = 237 ml

  • 4 cups oat flakes
  • 2 tsps. cinnamon
  • 1/2 tsp. dried ginger
  • pinch salt
  • 8 tbsps. pumpkin puree
  • 8 tbsps. honey or agave nectar (if honey is hard, first warm it)
  • 2 tbsps. coconut oil or oil of your choice (or just skip it)
  • 1 tsp. vanilla extract (I used vanilla sugar)
  • 100 g chocolate

Directions:

  • Turn oven on and set 150°C temperature.
  • In a bowl mix oats, cinnamon, ginger and salt.
  • In another smaller bowl mix pumpkin puree, honey, coconut oil and vanilla extract.
  • Pour wet ingredients to the dry ingredients bowl and mix. No dry oats should be left.
  • Pour mixture in a baking tray, lined with baking paper. Put baking tray into the oven.
  • Bake about 30-40 minutes mixing every 10 minutes. Baking time depends on your oven, so bake till oats will be mild brown colour.
  • Let cool granola and only then mix chopped chocolate.
  • Enjoy!

Simple oatmeal cake

This cake is not very sweet, so if you like sweeter add 1 cup of sugar. That I did when baked second time. Because of the bigger sugar amount batter was more runny so I skipped sour cream. The cake came out very good and everyone agreed that this time it was better. So make your decisions and try this really simple cake by yourself. – See more at: http://virtuve.seima.org/?p=3601&preview=true#sthash.LVQycmFN.dpuf

Favourite granola bars

For real – this is my favourite granola bars. I like especially to substitute 1 tablespoon of brown sugar with molasses sugar. My all family also likes them for snack and everytime these bars are gone, they miss them.

Swirl Pumpkin Brownies

Yes, I still have pumpkin puree 🙂 And this time it’s not so healthy but very chocolate brownie. It’s really easy, just I baked 10 minutes more. The next time, I will bake only 5 minutes more. And also, when I baked it second time I used less sugar, and my big girl tasted that. My hubby also agreed that brownie second time was not so good as the first time. So the third time I won’t change anything – these proportions are really perfect!

Oat muffins with dried fruits

I don’t know why but I look at baking with dried fruits suspiciously. But now I’m ashamed… I baked these muffins and ate half of them all by my self… Sour milk gave the taste of cottage cheese. Strange, but we like it 🙂

Honey-Peach Ice Cream

Honey-Peach Ice Cream

These ice creams are very creamy, with a mild taste of honey and peach. Just we all agreed that next time I will puree all peaches, because those that I chopped became like little ice cristals and were very very cold 🙂 And in the photo you can see what conditions I have almost all the time photographing my creations 😀
