Chanterelles with oven roasted potatoes

The autumn is near, and mushrooms are here. This year is the first year when I eat a lot of chanterelles and it’s because my mushroom hating hubby is away 🙂 So every time my parents go to the local market, they buy chanterelles for me and only me 🙂 (my kids also don’t eat mushrooms, unless they are on pizza.

To tell the truth, this dish last year ate even my hubby! And agreed that it not only looks great, but taste the same way too. To bake potatoes in the oven takes time, so sometimes I change them with boiled potatoes. However, if you are not in hurry, you should really try to bake them in the oven. It is more tasty that way.

Chanterelles with oven roasted potatoes

Time needed:
Yields: 4 servings
Calories: 218 kcal / serving

Ingredients:

  • 600 g potatoes
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • salt
  • 2 tbsps. oil
  • 500 g chanterelles
  • 1 big onion
  • 3-4 green onions, for serving

Directions:

  • Preheat oven to 200°C temperature.
  • Carefully wash potatoes and cut it in to big chunks.
  • Put potatoes on a baking tray. Sprinkle with onion and garlic powders, salt and one tablespoon of oil. Mix well with hands.
  • Put baking tray with potatoes in the oven and bake about 30-50 minutes (baking time will depend on potato chunk size). In the middle of baking, you can mix potatoes with spatula and then they will bake evenly from all sides.
  • While potatoes are in the oven, clean chanterelles.
  • Peel an onion and cut in squares.
  • In a pan, heat another tablespoon of oil. Add onions and fry a little bit.
  • Then add chanterelles and bake 5-7 minutes mixing time after time. Season with salt.
  • Add to the pan baked potatoes and mix lightly.
  • Cut green onions, sprinkles them on top of the pan and serve.
  • Enjoy!

At first glance it seems that it is simple pilaf with chicken. But lemon and hot chilli sauce gives spicy taste to the dish. I prepared it already two times: first – without mushrooms, because my hubby was at home, the second – with mushrooms, because I was all alone 🙂 Both times it was delicious. Don’t know about other kids, by mine don’t like spicy dishes, so I didn’t even asked to taste 🙂
